Easy Eggnog Pancakes
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup milk
2 cups diced plums
1/2 cup chopped walnuts (optional)
Directions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the eggs until light and fluffy. Add the sugar and beat until fluffy.
Add the oil and vanilla extract and beat until combined. Slowly add the dry ingredients and mix until combined.
Stir in the milk until the batter is smooth. Fold in the plums and walnuts (if using).
Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool before serving.
