Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon freshly grated lemon zest
  • 1/2 teaspoon freshly grated orange zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup diced fresh pineapple
  • 1/2 cup white chocolate chips
  • 1/2 cup macadamia nuts, chopped

Directions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugars until light and fluffy.
  3. Add the egg, vanilla extract, lemon zest, and orange zest and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until combined.
  6. Fold in the pineapple, white chocolate chips, and macadamia nuts.
  7. Drop the dough onto the prepared baking sheet in 2-tablespoon portions and flatten slightly.
  8. Bake for 10-12 minutes, or until golden brown.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
