Ingredients

  • 4 large bell peppers
  • 1 pound thinly sliced beef steak (such as ribeye or sirloin)
  • 1 onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 8 slices provolone cheese
  • Optional toppings: sliced jalapeños, sliced mushrooms, hot sauce

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  3. In a large skillet, heat the olive oil over medium-high heat.
  4. Add the thinly sliced beef steak to the skillet and cook until browned, breaking it up with a spatula.
  5. Add the sliced onion, green bell pepper, and red bell pepper to the skillet. Season with salt and black pepper to taste. Cook until the vegetables are tender and the steak is cooked through.
  6. Fill each bell pepper with the steak and vegetable mixture. Top each pepper with 2 slices of provolone cheese.
  7. Bake the stuffed peppers in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let the stuffed peppers cool slightly before serving.
