Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup pesto
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup chopped fresh basil
  • salt and pepper to taste

Directions

  1. In a medium saucepan, bring the quinoa and water to a boil.
  2. Reduce the heat to low and simmer for 12-15 minutes, or until the quinoa is cooked.
  3. Remove from heat and let the quinoa cool for 5 minutes.
  4. In a large bowl, combine the cooked quinoa, pesto, sun-dried tomatoes, and basil.
  5. Season with salt and pepper to taste.
  6. Serve warm or chilled.
