Preheat a panini press or a large skillet over medium heat.
Brush one side of each slice of bread with olive oil. Place two slices of bread on the panini press or skillet, oiled-side down.
Top each slice of bread with a slice of pancetta and a slice of mozzarella. Sprinkle with salt and pepper to taste.
Top the mozzarella with the remaining two slices of bread oiled-side up. Grill the sandwiches for 4-5 minutes, or until the bread is golden brown and the cheese is melted.
Serve immediately.
