Ingredients
1 cup polenta
2 tablespoons olive oil
1/2 cup diced onion
1 clove garlic, minced
1/2 cup diced bell pepper
1/2 cup diced tomatoes
1 teaspoon dried oregano
1 tablespoon balsamic vinegar
1/4 cup chopped fresh basil
Salt and pepper to taste
Directions
Prepare the polenta according to the instructions on the package. Set aside.
Heat the olive oil in a non-stick skillet over medium heat. Add the onion, garlic and bell pepper and cook until softened, about 5 minutes.
Add the tomatoes and oregano and cook until the tomatoes are softened, about 3 minutes. Add the balsamic vinegar and stir to combine.
Add the prepared polenta to the skillet and stir to combine. Cook for 5 minutes, stirring occasionally.
Remove the pan from the heat and stir in the basil. Season with salt and pepper to taste.
Serve the pan-fried polenta with the bruschetta topping.
