Ingredients

  • 1 cup polenta
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomatoes
  • 1 teaspoon dried oregano
  • 1 tablespoon balsamic vinegar
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste

Directions

  1. Prepare the polenta according to the instructions on the package. Set aside.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the onion, garlic and bell pepper and cook until softened, about 5 minutes.
  3. Add the tomatoes and oregano and cook until the tomatoes are softened, about 3 minutes. Add the balsamic vinegar and stir to combine.
  4. Add the prepared polenta to the skillet and stir to combine. Cook for 5 minutes, stirring occasionally.
  5. Remove the pan from the heat and stir in the basil. Season with salt and pepper to taste.
  6. Serve the pan-fried polenta with the bruschetta topping.
