Ingredients
- 4 potatoes
- 3 eggs
- 1 carrot
- ½ cup mayonnaise
- 1 cup olives
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Directions
- Boil the potatoes, eggs and carrots until tender. Drain and cool.
- In a medium bowl, mix the mayonnaise, olives, olive oil, lemon juice, garlic powder, salt and pepper.
- In a large bowl, combine the potatoes, eggs, and carrots. Pour in the mayonnaise mixture and stir until everything is well coated.
- Refrigerate for at least an hour before serving.
