This hearty dish is often enjoyed with steamed rice and is perfect for family gatherings and special occasions. Slow-cooked until the meat becomes tender and the flavors meld together, Paksiw na Pata is a comforting and satisfying meal.

Ingredients

  • 2.5 lbs pig's feet, cleaned and cut into serving pieces
  • 1 cup vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 1 teaspoon whole peppercorns
  • 4 cloves garlic, crushed
  • 1 onion, sliced
  • 2 bay leaves
  • 2 tablespoons brown sugar
  • Salt, to taste
  • Cooking oil, for frying

Directions

  1. In a large pot, heat some cooking oil over medium heat. Fry the pig's feet until browned. Remove and set aside.
  2. In the same pot, sauté the garlic and onion until fragrant.
  3. Add the fried pig's feet back into the pot and pour in the vinegar, soy sauce, water, brown sugar, bay leaves, and peppercorns. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 hours or until the pig's feet are tender.
  5. Once the meat is tender, season with salt to taste. Simmer for an additional 10 minutes.
