Ingredients

  • 2 cups fresh or frozen corn
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Spread corn and black beans on a baking sheet. Bake for 8 to 10 minutes, stirring once or twice, until golden brown.
  3. In a medium bowl, combine roasted corn and black beans, red onion, cilantro, lime juice, cumin, garlic powder, and salt. Mix well.
  4. Serve at room temperature or chilled.
