Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 2 oranges
  • 2 tablespoons soy sauce
  • 1 tablespoon grated ginger
  • 3 cloves of garlic, minced
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup snow peas
  • 2 green onions, chopped
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • Salt and pepper, to taste

Directions

  1. Zest one orange and set the zest aside. Juice both oranges and set the juice aside.
  2. In a small bowl, whisk together the orange juice, soy sauce, grated ginger, and minced garlic.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the shrimp and cook until pink and opaque, approximately 2-3 minutes per side.
  5. Remove the cooked shrimp from the skillet and set aside.
  6. In the same skillet, add the sliced bell peppers and snow peas. Stir fry for 4-5 minutes until crisp-tender.
  7. Return the cooked shrimp to the skillet and pour the orange-ginger sauce over the shrimp and vegetables. Stir well to coat everything evenly.
  8. In a separate small bowl, whisk together the cornstarch and cold water until smooth.
  9. Pour the cornstarch mixture into the skillet and cook for an additional 2-3 minutes until the sauce thickens.
  10. Season with salt and pepper to taste.
  11. Garnish with the chopped green onions and orange zest.
