Ingredients

  • 1 4-pound bone-in rib roast
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 450°F (230°C).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper to create a rub.
  3. Pat the rib roast dry with paper towels and then generously rub the herb mixture all over the roast, pressing it firmly to adhere.
  4. Place the roast on a rack in a roasting pan, bone side down.
  5. Insert a meat thermometer into the thickest part of the roast, making sure it does not touch the bone.
  6. Roast the rib roast in the preheated oven for 15 minutes.
  7. Reduce the oven temperature to 325°F (160°C) and continue to roast for about 2 hours or until the internal temperature reaches your desired level of doneness (135°F (57°C) for medium-rare, 145°F (63°C) for medium).
  8. Remove the roast from the oven and let it rest for at least 15 minutes before carving.
  9. Carve the rib roast into thick slices and serve with your favorite sides.
