Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can refried beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded cheddar cheese
  • 8 large flour tortillas
  • Vegetable oil, for frying
  • Toppings: sour cream, guacamole, salsa, chopped tomatoes, chopped lettuce

Directions

  1. In a large skillet, brown the ground beef over medium heat until cooked through. Drain any excess fat.
  2. Add the diced onion and minced garlic to the skillet with the ground beef. Cook for an additional 2-3 minutes until the onion is translucent.
  3. Stir in the refried beans, cumin, chili powder, paprika, salt, black pepper, and cayenne pepper. Cook for another 5 minutes, stirring occasionally.
  4. Remove the skillet from the heat and let the beef and bean mixture cool slightly.
  5. Preheat a large skillet or deep fryer with vegetable oil over medium-high heat.
  6. Place a large spoonful of the beef and bean mixture onto the center of a flour tortilla. Sprinkle with shredded cheddar cheese.
  7. Fold the sides of the tortilla over the filling, then fold the bottom of the tortilla up and roll tightly to form a chimichanga.
  8. Secure the chimichanga with toothpicks to hold it together.
  9. Carefully place the chimichanga in the preheated skillet or deep fryer and cook until golden brown and crispy, about 3-4 minutes per side.
  10. Remove the chimichanga from the oil and drain on a paper towel-lined plate.
  11. Repeat the filling and rolling process with the remaining tortillas and beef and bean mixture.
  12. Serve the beef and bean chimichangas hot with your choice of toppings such as sour cream, guacamole, salsa, chopped tomatoes, and chopped lettuce.
