- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can refried beans
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- Vegetable oil, for frying
- Toppings: sour cream, guacamole, salsa, chopped tomatoes, chopped lettuce
Directions
- In a large skillet, brown the ground beef over medium heat until cooked through. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet with the ground beef. Cook for an additional 2-3 minutes until the onion is translucent.
- Stir in the refried beans, cumin, chili powder, paprika, salt, black pepper, and cayenne pepper. Cook for another 5 minutes, stirring occasionally.
- Remove the skillet from the heat and let the beef and bean mixture cool slightly.
- Preheat a large skillet or deep fryer with vegetable oil over medium-high heat.
- Place a large spoonful of the beef and bean mixture onto the center of a flour tortilla. Sprinkle with shredded cheddar cheese.
- Fold the sides of the tortilla over the filling, then fold the bottom of the tortilla up and roll tightly to form a chimichanga.
- Secure the chimichanga with toothpicks to hold it together.
- Carefully place the chimichanga in the preheated skillet or deep fryer and cook until golden brown and crispy, about 3-4 minutes per side.
