Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup plain yogurt, whisked
  • 1 cup coconut milk
  • 1/2 cup tomato puree
  • 2 tablespoons vegetable oil
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional for added heat)
  • 1/2 cup water
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan bread, for serving

Directions

  1. In a large skillet over medium heat, heat the vegetable oil. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes, until fragrant.
  3. Transfer the onion, garlic, and ginger mixture to the slow cooker.
  4. In the same skillet, brown the chicken pieces on all sides. You may need to do this in batches to ensure even browning.
  5. Once the chicken is browned, transfer it to the slow cooker with the onion mixture.
  6. In a mixing bowl, combine the whisked yogurt, coconut milk, tomato puree, ground coriander, ground cumin, turmeric, paprika, ground cinnamon, cayenne pepper (if using), and salt. Mix well.
  7. Pour the yogurt and spice mixture over the chicken in the slow cooker. Add water and stir to combine all the ingredients.
  8. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  9. Before serving, taste and adjust the seasonings if needed. Add more salt or spices according to your preference.
  10. Serve the Indian Chicken Korma over cooked rice or with warm naan bread. Garnish with fresh cilantro.
  11. Enjoy!
