- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

- 1 cup plain yogurt, whisked
- 1 cup coconut milk
- 1/2 cup tomato puree
- 2 tablespoons vegetable oil
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional for added heat)
- 1/2 cup water
- Salt, to taste
- Fresh cilantro, for garnish

Directions
- In a large skillet over medium heat, heat the vegetable oil. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes, until fragrant.
- Transfer the onion, garlic, and ginger mixture to the slow cooker.
- In the same skillet, brown the chicken pieces on all sides. You may need to do this in batches to ensure even browning.
- Once the chicken is browned, transfer it to the slow cooker with the onion mixture.
- In a mixing bowl, combine the whisked yogurt, coconut milk, tomato puree, ground coriander, ground cumin, turmeric, paprika, ground cinnamon, cayenne pepper (if using), and salt. Mix well.
