Ingredients
- 3lbs potatoes
- 1/2 cup mayonnaise
- 3 eggs
- 1/2 cup chopped onion
- 1 teaspoon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped dill pickles
Directions
- Boil potatoes in a large pot of water for 20 minutes, or until potatoes are tender.
- Drain and cool potatoes.
- In a separate bowl, whisk together mayonnaise, eggs, onion, mustard, salt, and pepper.
- Peel and dice potatoes and add to the mayonnaise mixture.
- Stir in dill pickles.
- Refrigerate for 1 hour, or until chilled.
- Serve chilled.
