Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9-inch round cake pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In a separate large bowl, mix together the oil, sugar, eggs, and vanilla. Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the chopped apples. Pour the batter into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
