My Best Kid-Friendly Chili

Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 pound of ground beef
  • 1 can of diced tomatoes
  • 1 can of kidney beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Optional: cayenne pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell peppers and cook until softened, about 5 minutes.
  4. Add the ground beef and cook until browned, about 8 minutes.
  5. Add the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper. Stir to combine.
  6. Reduce the heat to low and simmer for 25 minutes, stirring occasionally.
  7. Taste and adjust the seasonings, if desired.
  8. Serve with your favorite toppings.
