Ingredients
- 2 tablespoons of olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 pound of ground beef
- 1 can of diced tomatoes
- 1 can of kidney beans, drained and rinsed
- 1 can of black beans, drained and rinsed
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- Salt and pepper to taste
- Optional: cayenne pepper to taste
Directions
- Heat the olive oil in a large pot over medium-high heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the bell peppers and cook until softened, about 5 minutes.
- Add the ground beef and cook until browned, about 8 minutes.
- Add the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper. Stir to combine.
- Reduce the heat to low and simmer for 25 minutes, stirring occasionally.
- Taste and adjust the seasonings, if desired.
- Serve with your favorite toppings.
