Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 onion, diced
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 cup firm tofu, cubed
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 8 ounces rice noodles
  • 2 green onions, sliced
  • 1/4 cup sesame seeds

Directions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the onion, bell pepper, mushrooms, and tofu to the skillet and cook for 5 minutes, stirring occasionally.
  3. Add the garlic, ginger, soy sauce, sesame oil, and red pepper flakes and cook for an additional 2 minutes.
  4. Add the rice noodles and stir to combine.
  5. Reduce the heat to low and simmer for 5 minutes, stirring occasionally.
  6. Remove the skillet from the heat and stir in the green onions and sesame seeds.
  7. Serve the stir-fry warm.
