Ingredients
1 tablespoon vegetable oil
1/2 onion, diced
1 red bell pepper, sliced
1 cup mushrooms, sliced
1 cup firm tofu, cubed

Directions
Heat the vegetable oil in a large skillet over medium-high heat.
Add the onion, bell pepper, mushrooms, and tofu to the skillet and cook for 5 minutes, stirring occasionally.
Add the garlic, ginger, soy sauce, sesame oil, and red pepper flakes and cook for an additional 2 minutes.
Add the rice noodles and stir to combine.
Reduce the heat to low and simmer for 5 minutes, stirring occasionally.
Remove the skillet from the heat and stir in the green onions and sesame seeds.
Serve the stir-fry warm.
