Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 6-8 tablespoons ice water
  • 6 large Granny Smith apples, peeled, cored, and thinly sliced
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon milk
  • 1 tablespoon granulated sugar

Directions

  1. In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and use a pastry cutter or your hands to cut the butter into the flour until it resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough comes together. Divide the dough in half and shape each half into a disk. Wrap them in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. In a separate mixing bowl, combine the sliced apples, granulated sugar, all-purpose flour, ground cinnamon, ground nutmeg, and lemon juice. Toss well to coat the apple slices evenly.
  5. Remove one disk of dough from the refrigerator and roll it out on a lightly floured surface to fit a 9-inch pie dish. Carefully transfer the rolled dough to the pie dish and press it gently into the bottom and sides.
  6. Pour the apple mixture into the pie crust, spreading it out evenly.
  7. Roll out the second disk of dough and cover the pie with it. Trim any excess dough from the edges and crimp them together with your fingers or a fork to seal the pie.
  8. Brush the top of the pie with melted butter and make a few small slits to allow steam to escape during baking.
  9. Brush the crust with milk and sprinkle sugar over the top.
  10. Place the pie on a baking sheet and bake it in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Remove the pie from the oven and let it cool for at least 30 minutes before slicing and serving. Enjoy!
