Ingredients

  • 1 jar (7-ounce) marinated artichoke hearts, drained and chopped
  • 1 cup chopped roasted red peppers
  • 1 cup chopped kalamata olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • Assorted crackers or sliced French bread, for serving

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine the artichoke hearts, roasted peppers, olives, parsley, olive oil, garlic, oregano, red pepper flakes, salt, and pepper.
  3. Transfer the mixture to an 8-inch baking dish and top with the mozzarella cheese.
  4. Bake for 15 minutes, or until the cheese is melted and bubbly.
  5. Serve warm with crackers or French bread.
