Ingredients

  • 1 pound fettuccini noodles
  • 1 tablespoon olive oil
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups skim milk
  • 3/4 cup non-fat Greek yoghurt
  • 1/3 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder

Directions

  1. Bring a large pot of salted water to a boil. Add the fettuccini noodles and cook for about 8 minutes, or until al dente.
  2. In a large saucepan, heat the olive oil and butter over medium heat until the butter is melted. Add the flour and whisk until smooth.
  3. Slowly pour in the skim milk, whisking constantly, until the mixture is smooth and thickened. Add the Greek yoghurt and stir until combined.
  4. Add the parmesan cheese, salt, pepper and garlic powder and stir until combined.
  5. Drain the cooked fettuccini and add it to the saucepan. Stir until the noodles are coated with the sauce.
  6. Serve the fettuccini alfredo immediately.
