Ingredients
- 1 pound fettuccini noodles
- 1 tablespoon olive oil
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups skim milk
- 3/4 cup non-fat Greek yoghurt
- 1/3 cup grated parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon garlic powder
Directions
- Bring a large pot of salted water to a boil. Add the fettuccini noodles and cook for about 8 minutes, or until al dente.
- In a large saucepan, heat the olive oil and butter over medium heat until the butter is melted. Add the flour and whisk until smooth.
- Slowly pour in the skim milk, whisking constantly, until the mixture is smooth and thickened. Add the Greek yoghurt and stir until combined.
- Add the parmesan cheese, salt, pepper and garlic powder and stir until combined.
- Drain the cooked fettuccini and add it to the saucepan. Stir until the noodles are coated with the sauce.
- Serve the fettuccini alfredo immediately.
