Ingredients

  • 3 cups chopped fresh rhubarb
  • 1 1/2 cups sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Directions

  1. Preheat oven to 350°F and grease a 9x13 inch baking pan.
  2. In a large bowl, mix together rhubarb, sugar, oil, egg, and vanilla until well combined.
  3. Add buttermilk and mix well.
  4. In a separate bowl, combine flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Stir in walnuts, if using.
  7. Pour batter into prepared baking pan.

  9. Sprinkle cinnamon sugar mixture over the top of the cake batter.
