Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans
  • 1/4 cup melted butter

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over-mix.
  5. Pour the batter into the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before frosting.
  7. To make the frosting, mix together the coconut, pecans, and melted butter in a medium bowl. Spread the frosting onto the cooled cake.
