The best part is that this recipe maintains the natural sweetness of the delicata squash while ensuring a tender texture.

Ingredients

  • 2 delicata squash
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Wash the delicata squash thoroughly and pat them dry.
  2. Cut off both ends of the squash and slice them in half lengthwise. Scoop out the seeds and discard them.
  3. Place the squash halves, cut side down, in a microwave-safe dish. Add around 1/4 inch of water to the dish.
  4. Cover the dish with a microwave-safe lid or plastic wrap, leaving a small vent to release steam.
  5. Microwave the dish on high power for 8-10 minutes, or until the squash is fork-tender.
  6. While the squash is cooking, prepare the glaze. In a small bowl, combine melted butter, brown sugar, cinnamon, salt, and black pepper.
  7. Once the squash is cooked, carefully remove the dish from the microwave and drain any remaining water.
  8. Flip the squash halves over so that the cut sides face up. Brush the glaze evenly over the squash, making sure to cover all surfaces.
  9. Return the dish to the microwave and cook on high power for an additional 2-3 minutes, or until the glaze caramelizes slightly.
  10. Remove the dish from the microwave and let the squash cool for a few minutes before serving.
  11. Serve the microwave delicata squash as a delightful side dish alongside your favorite main course.
