Ingredients

  • 1 lb of pasta
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, diced
  • 1 can diced tomatoes, undrained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup cilantro, chopped

Directions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
  2. Heat the oil in a large skillet over medium-high heat. Add the bell peppers, onion, garlic and jalapeno and cook until the vegetables are tender, about 5 minutes.
  3. Add the tomatoes, cumin, chili powder, salt and pepper and cook until the tomatoes are softened, about 5 minutes.
  4. Add the cooked pasta and cilantro and stir to combine. Cook until heated through, about 5 minutes.
