Ingredients

  • 1 lb. ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (1 1/2-oz.) package taco seasoning mix
  • 1 (16-oz.) can refried beans
  • 1 (10-oz.) can diced tomatoes with green chilies
  • 1 (4-oz.) can chopped green chilies
  • 1/2 cup water
  • 6 (8-inch) flour tortillas
  • 2 cups (8 oz.) shredded Cheddar cheese
  • 1/4 cup sliced black olives
  • 2 green onions, chopped

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, cook beef, onion, and garlic over medium-high heat until beef is no longer pink. Drain fat.
  3. Add taco seasoning, refried beans, diced tomatoes, chilies, and water. Simmer for 10 minutes.
  4. Spread one-third of the beef mixture in a 13- x 9-inch baking dish.
  5. Top with two tortillas, overlapping if necessary. Spread one-third of the beef mixture over the tortillas. Sprinkle with one-third of the cheese.
  6. Repeat layers of tortillas, beef mixture, and cheese two more times.
  7. Sprinkle with olives and green onions. Bake for 25 minutes or until cheese is melted.
  8. Let stand 10 minutes before serving.
