Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 large potato, diced
  • 1/2 head of cabbage, shredded
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  2. Add the carrots, potato, and cabbage and cook for another 5 minutes, stirring occasionally.
  3. Add the vegetable broth, thyme, oregano, basil, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce the heat to low and simmer for 30 minutes.
  4. Remove the bay leaf and serve the soup warm.
