Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 large potato, diced
- 1/2 head of cabbage, shredded
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Directions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
- Add the carrots, potato, and cabbage and cook for another 5 minutes, stirring occasionally.
- Add the vegetable broth, thyme, oregano, basil, bay leaf, salt, and pepper. Bring the soup to a boil, then reduce the heat to low and simmer for 30 minutes.
- Remove the bay leaf and serve the soup warm.
