Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 jalapeno pepper, diced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1 (6-ounce) can tomato paste
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, bell peppers, and jalapeno pepper; cook, stirring occasionally, until softened, about 5 minutes.
  3. Stir in cumin, paprika, chili powder, oregano, salt, and pepper; cook, stirring constantly, until fragrant, about 1 minute.
  4. Add black beans, kidney beans, corn, diced tomatoes, tomato paste, and apple cider vinegar; stir to combine.
  5. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until thickened, about 20 minutes.
  6. Stir in cilantro and serve.
