1 pound green beans, trimmed and cut into 1-inch pieces
1/4 cup sliced almonds
1/4 cup olive oil
1/4 cup freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup feta cheese, crumbled
Directions
Bring a large pot of salted water to a boil and add the green beans. Cook for 4 minutes, or until tender. Drain and rinse in cold water to stop the cooking process.
In a small bowl, whisk together the olive oil, lemon juice, mustard, honey, salt, and pepper to make a dressing.
In a large bowl, combine the green beans, almonds, and feta cheese. Pour the dressing over the salad and toss to combine.
Serve the salad chilled or at room temperature.
