Ingredients
- 1 lb. beef stew meat, cubed
- 2 tablespoons oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 teaspoon chili powder
- 1 teaspoon ground cardamom
- 1 teaspoon ground cinnamon
- 1 teaspoon black pepper
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup water
- 1 (14.5 ounce) can diced tomatoes
- 1 (14.5 ounce) can coconut milk
Directions
- Heat oil in a large pot over medium-high heat.
- Add the beef cubes and cook for 5 minutes.
- Add the garlic and onion and cook for 2 minutes, stirring frequently.
- Add the curry powder, turmeric, cumin, coriander, ginger, chili powder, cardamom, cinnamon, pepper, cloves, nutmeg, and salt and mix well.
- Add the water, diced tomatoes, and coconut milk and stir to combine.
- Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
- Serve over cooked rice or with naan bread.
