Ingredients
- 4 cod fillets
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tomatoes, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- Preheat the grill to medium heat.
- Brush the cod fillets with olive oil and season with salt and pepper.
- Grill the cod fillets on the preheated grill, about 3-4 minutes per side.
- In a skillet, heat the remaining olive oil over medium-high heat.
- Add the spinach, garlic, and tomatoes and cook until the spinach is wilted, about 3-4 minutes.
