Ingredients

  • 4 cod fillets
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tomatoes, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the grill to medium heat.
  2. Brush the cod fillets with olive oil and season with salt and pepper.
  3. Grill the cod fillets on the preheated grill, about 3-4 minutes per side.
  4. In a skillet, heat the remaining olive oil over medium-high heat.
  5. Add the spinach, garlic, and tomatoes and cook until the spinach is wilted, about 3-4 minutes.
  6. Serve the cod with the spinach and tomatoes.
