Ingredients
- 1/2 cup butter, softened
- 2/3 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup mashed banana
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/2 cup crushed pineapple, drained
- 2/3 cup chopped walnuts
- 1/2 cup chopped maraschino cherries
- 1/2 cup butter, softened
- 2 cups confectioners' sugar
- 2 tablespoons crushed pineapple, drained
- 1/2 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla and mashed banana. Combine the flour, baking powder, baking soda, cinnamon, and salt; stir into the banana mixture alternately with the buttermilk. Fold in the crushed pineapple, walnuts, and cherries. Spread the mixture into the prepared pan.
- Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
- To make the frosting, cream together the butter and confectioners' sugar in a medium bowl. Stir in the crushed pineapple and vanilla extract until smooth. Spread over the cooled cake.
