Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed banana
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup crushed pineapple, drained
  • 2/3 cup chopped walnuts
  • 1/2 cup chopped maraschino cherries
  • 1/2 cup butter, softened
  • 2 cups confectioners' sugar
  • 2 tablespoons crushed pineapple, drained
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  2. In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla and mashed banana. Combine the flour, baking powder, baking soda, cinnamon, and salt; stir into the banana mixture alternately with the buttermilk. Fold in the crushed pineapple, walnuts, and cherries. Spread the mixture into the prepared pan.
  3. Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of the cake comes out clean. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
  4. To make the frosting, cream together the butter and confectioners' sugar in a medium bowl. Stir in the crushed pineapple and vanilla extract until smooth. Spread over the cooled cake.
