- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound lean ground turkey
- 1 can (15 ounces) crushed tomatoes
- 1 can (6 ounces) tomato paste
- 1 can (8 ounces) tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup low-fat ricotta cheese
- 1/2 cup shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley, for garnish
Directions
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until onions are translucent, about 5 minutes.
- Add the ground turkey to the skillet and cook until browned, breaking it up into small pieces with a spatula.
- Stir in the crushed tomatoes, tomato paste, tomato sauce, dried basil, dried oregano, salt, and black pepper. Simmer the sauce for 15 minutes, stirring occasionally.
- Preheat the oven to 375°F (190°C).
