Ingredients

  • 2 bunches of collard greens
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of ground cayenne pepper
  • 1/2 cup of vegetable broth
  • Salt and pepper to taste

Directions

  1. Wash the collard greens thoroughly and remove the stems. Stack the leaves on top of each other, roll them tightly, and slice them into thin ribbons.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent.
  3. Add the smoked paprika, ground coriander, ground ginger, and ground cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.
  4. Add the sliced collard greens to the pot and sauté for a few minutes until they begin to wilt.
  5. Pour in the vegetable broth and reduce the heat to low. Cover the pot and let the greens simmer for approximately 30 minutes, or until they reach your desired tenderness.
  6. Stir occasionally and add salt and pepper to taste.
  7. Once the collard greens are tender, remove them from the heat and serve hot as a side dish or as a main course with rice or bread.
  8. Enjoy the authentic flavors of Liberian cuisine!
