- 1 teaspoon of smoked paprika
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground ginger
- 1/2 teaspoon of ground cayenne pepper
- 1/2 cup of vegetable broth
- Salt and pepper to taste
Directions
- Wash the collard greens thoroughly and remove the stems. Stack the leaves on top of each other, roll them tightly, and slice them into thin ribbons.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until fragrant and translucent.
- Add the smoked paprika, ground coriander, ground ginger, and ground cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.
- Add the sliced collard greens to the pot and sauté for a few minutes until they begin to wilt.
- Pour in the vegetable broth and reduce the heat to low. Cover the pot and let the greens simmer for approximately 30 minutes, or until they reach your desired tenderness.
- Stir occasionally and add salt and pepper to taste.
- Once the collard greens are tender, remove them from the heat and serve hot as a side dish or as a main course with rice or bread.
