Ingredients

  • Pie Crust:

  • Quiche Filling:
  • 2 tablespoons unsalted butter
  • 2 leeks, white and pale green parts only, thinly sliced

  • 1 cup shredded Gruyere cheese

Directions

  1. To make the pie crust, in a food processor, combine the flour and salt. Add the butter and pulse until the mixture resembles coarse crumbs. Add the ice water, 1 tablespoon at a time, pulsing after each addition, until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough to fit a 9-inch pie dish. Trim the excess dough and crimp the edges. Prick the bottom of the crust with a fork. Line the crust with parchment paper or aluminum foil and fill it with pie weights or dried beans. Bake for 15 minutes. Remove the weights and parchment paper or foil, and bake for an additional 5 minutes, or until the crust is lightly golden. Set aside.
  3. To make the quiche filling, melt the butter in a large skillet over medium heat. Add the leeks and sauté until softened, about 5 minutes. Remove from heat.
  4. In a medium bowl, whisk together the eggs, heavy cream, salt, and pepper. Stir in the sautéed leeks and shredded Gruyere cheese. Pour the filling into the pre-baked crust.
  5. Bake the quiche for 30-35 minutes, or until the filling is set and lightly golden on top. Let it cool for a few minutes before serving. Enjoy warm or at room temperature.
