Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup almonds, chopped
  • 1/2 cup honey
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts, chopped
  • 1/2 cup pecans, chopped

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, mix together the almonds, honey, oil, eggs, and vanilla extract until well blended.
  4. Stir the wet ingredients into the flour mixture until just blended. Fold in the walnuts and pecans.
  5. Pour the batter into the prepared pan. Sprinkle the top with the remaining almonds.
  6. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
