Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup jam of your choice

Directions

  1. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. In a separate bowl, sift together the flour, salt, and baking powder. Slowly add the dry ingredients to the wet ingredients and mix until a dough forms.
  3. Roll out the dough on a lightly floured surface to 1/4 inch thick. Using a biscuit cutter or the rim of a glass, cut out circles of dough.
  4. Place a teaspoon of jam in the center of each circle. Fold the dough over the jam and seal the edges with a fork.
  5. Place the cookies on a greased baking sheet and bake at 350°F for 15-18 minutes, or until the edges are golden brown.
  6. Remove from the oven and cool on a wire rack before serving.
