Heat the olive oil in a large skillet over medium heat. Add the onion and pepper and sauté until the onion is translucent and the pepper is tender, about 5 minutes.
Add the white wine, white wine vinegar, honey, salt and pepper and stir to combine. Simmer for 3 minutes, or until the sauce has reduced and thickened slightly.
Add the lamb scallopini to the skillet and cook for 4-5 minutes per side, or until cooked to your desired doneness.
Serve the lamb scallopini with the pepper and onion agrodolce and garnish with freshly chopped parsley.
