Ingredients
- 2 lamb scallopini
- 1 tablespoon olive oil
- 1/2 onion, thinly sliced
- 1 red pepper, thinly sliced
- 1/4 cup white wine
- 1 tablespoon white wine vinegar
- 2 tablespoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion and pepper and sauté until the onion is translucent and the pepper is tender, about 5 minutes.
- Add the white wine, white wine vinegar, honey, salt and pepper and stir to combine. Simmer for 3 minutes, or until the sauce has reduced and thickened slightly.
- Add the lamb scallopini to the skillet and cook for 4-5 minutes per side, or until cooked to your desired doneness.
- Serve the lamb scallopini with the pepper and onion agrodolce and garnish with freshly chopped parsley.
