Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 cups chopped collard greens
  • 1/2 cup vegetable broth
  • 2 tablespoons apple cider vinegar
  • 1/4 cup cooked bacon, crumbled (optional)

Directions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the garlic and onion and cook until softened, about 5 minutes.
  3. Add the smoked paprika, cayenne pepper, black pepper, and salt and cook for 1 minute.
  4. Add the collard greens and vegetable broth and cook for 5 minutes, stirring occasionally.
  5. Add the apple cider vinegar and cook for an additional 5 minutes.
  6. Stir in the bacon, if using, and serve.
