1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1 onion, chopped

Directions
Heat the oil in a large skillet over medium-high heat.
Add the chicken cubes and cook until golden brown, about 4 minutes.
Add the onion, garlic, oregano, basil, salt, and pepper and cook until the onion is softened, about 3 minutes.
Stir in the tomatoes and cook until the chicken is cooked through, about 5 minutes.
Serve over hot cooked rice.

You can add other vegetables such as bell peppers or carrots to the dish.
You can substitute boneless, skinless chicken thighs in this recipe.
