Ingredients

  • 1 lb. rice noodles
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili flakes
  • 1/4 cup fish sauce
  • 2 tablespoons tamarind paste
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • Salt and pepper, to taste

Directions

  1. Cook the rice noodles according to the package instructions.
  2. Meanwhile, heat the oil in a large skillet over medium heat.
  3. Add the onion, bell pepper, garlic, ginger, turmeric, cumin, coriander, and chili flakes, and cook for 4-5 minutes, or until the vegetables are softened.
  4. Add the fish sauce and tamarind paste, and stir to combine.
  5. Add the cooked noodles to the skillet and toss to combine.
  6. Add the eggs and mix until the eggs are cooked.
  7. Add the cilantro and mint, and season with salt and pepper, to taste.
  8. Serve hot.
