Ingredients
1 cup uncooked couscous
1/2 cup black olives, sliced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled

Directions
Bring 1 1/2 cups of water to a boil in a medium saucepan.

Remove from heat and let stand for 5 minutes, then fluff with a fork.
Transfer couscous to a large bowl and add the olives, tomatoes, feta cheese, and cucumber.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the couscous and mix until everything is well combined.
Serve at room temperature or chilled.
