Ingredients
- 1 cup uncooked couscous
- 1/2 cup black olives, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup cucumber, diced
- 1/4 cup extra-virgin olive oil

Directions
- Bring 1 1/2 cups of water to a boil in a medium saucepan.
- Add the couscous and stir to combine. Reduce heat to low, cover, and simmer for 10 minutes.
- Remove from heat and let stand for 5 minutes, then fluff with a fork.
- Transfer couscous to a large bowl and add the olives, tomatoes, feta cheese, and cucumber.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the couscous and mix until everything is well combined.
