Ingredients

  • 1 cup uncooked couscous
  • 1/2 cup black olives, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cucumber, diced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste

Directions

  1. Bring 1 1/2 cups of water to a boil in a medium saucepan.
  2. Add the couscous and stir to combine. Reduce heat to low, cover, and simmer for 10 minutes.
  3. Remove from heat and let stand for 5 minutes, then fluff with a fork.
  4. Transfer couscous to a large bowl and add the olives, tomatoes, feta cheese, and cucumber.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the couscous and mix until everything is well combined.
  6. Serve at room temperature or chilled.
