Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/2 cup black truffle, finely chopped
  • 1/2 cup heavy cream
  • 1/4 cup parmesan cheese, grated
  • 2 cloves garlic, minced

Directions

  1. In a large bowl, mix together the flour, eggs, salt, and pepper until a dough forms. Knead the dough for 5 minutes, then form into a ball.
  2. On a lightly floured surface, roll the dough out into a 1/4 inch thick sheet. Cut the dough into small pieces, about 1 inch in size.
  3. Drop each piece into a pot of boiling water and cook for 2-3 minutes, or until the gnocchi float to the top. Remove the gnocchi with a slotted spoon and place on a plate.
  4. In a separate skillet, heat the olive oil over medium heat. Add the garlic and cook for 1 minute. Add the cream and bring to a simmer. Stir in the parmesan cheese and black truffle and stir until combined.
  5. Add the cooked gnocchi to the skillet and toss to coat. Serve warm.
