Ingredients

  • 1 cup tahini
  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1/4 cup sesame seeds for garnish (optional)

Directions

  1. Preheat oven to 350 degrees F and line two baking sheets with parchment paper.
  2. In the bowl of a stand mixer, beat together tahini and butter until light and fluffy, about 2 minutes.
  3. Add in both sugars and mix until well combined.
  4. Add in egg and vanilla extract and mix until combined.
  5. In a separate bowl, whisk together baking powder, baking soda, salt, and flour.
  6. Add dry ingredients to wet ingredients and mix until just combined.
  7. Scoop dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with the palm of your hand. Sprinkle with sesame seeds, if desired.
  8. Bake for 12-15 minutes, until lightly golden.
  9. Remove from oven and let cool on baking sheet for 5 minutes before transferring to a cooling rack.
