Ingredients

  • 3 pound chuck roast
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste

Directions

  1. Heat the olive oil in the pressure cooker over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, thyme, rosemary, salt, and pepper and cook for another minute.
  3. Add the beef broth, Worcestershire sauce, and tomato paste and stir to combine.
  4. Add the chuck roast to the pressure cooker and turn to coat with the sauce. Close the lid and cook on high pressure for 25 minutes.
  5. Allow the pressure to release naturally for 10 minutes, then open the lid.
  6. Remove the roast from the pressure cooker and let it rest for 10 minutes before slicing and serving.
