Ingredients

  • 1 lb beef stew meat, cubed
  • 4 medium beets, peeled and shredded
  • 1 medium onion, chopped
  • 3 medium carrots, peeled and shredded
  • 3 medium potatoes, peeled and diced
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons sugar
  • 2 tablespoons white vinegar
  • Salt and pepper to taste
  • Sour cream and fresh dill for garnish

Directions

  1. In a large soup pot, heat some oil over medium-high heat. Add the beef stew meat and brown on all sides. Remove the meat from the pot and set aside.
  2. In the same pot, add the onion and sauté until translucent. Add the garlic and cook for another minute.
  3. Return the beef to the pot and add the shredded beets, carrots, potatoes, diced tomatoes, tomato paste, beef broth, water, bay leaves, sugar, and vinegar. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce the heat to low and simmer for about 90 minutes, or until the beef is tender and the flavors have melded together.
  5. Remove the bay leaves from the soup and serve hot. Garnish with a dollop of sour cream and some fresh dill.
