Ingredients

  • 2 cups cooked Japanese short-grain white rice
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of sugar
  • 1 teaspoon of salt
  • ½ teaspoon of sesame oil
  • ¼ teaspoon of soy sauce
  • 2 tablespoons of black sesame seeds
  • 2 tablespoons of white sesame seeds
  • 1 small carrot
  • 1 small piece of kombu seaweed

Directions

  1. Place the cooked rice in a large bowl and add the rice vinegar, sugar, salt, sesame oil, and soy sauce. Mix until all the ingredients are evenly distributed.
  2. Divide the rice into four equal portions. Take one portion and form it into a ball. Flatten it slightly into a disc shape.
  3. To make the Jack-O-Lantern face, press a small piece of kombu seaweed into the center of the disc for the mouth and two small pieces of carrot for the eyes.
  4. Sprinkle the black and white sesame seeds over the onigiri to finish.
  5. Repeat with the remaining portions of rice.
