Ingredients

  • 4 boneless, skinless chicken filets
  • 2 cups bread crumbs
  • 1 egg, beaten
  • 2 tablespoons vegetable or canola oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup sweet Thai chili sauce
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh parsley

Directions

  1. Preheat the oven to 400 degrees F.
  2. Place the chicken filets in a shallow dish. In a separate shallow dish, combine the bread crumbs, egg, oil, soy sauce, rice vinegar, sesame oil, garlic powder, ginger, and red pepper flakes. Mix until combined.
  3. Dip each chicken filet into the bread crumb mixture, coating each side completely. Place the chicken filets on a greased baking sheet. Bake for 20 minutes, or until the chicken is cooked through.
  4. Meanwhile, in a small saucepan, combine the Thai chili sauce, cilantro, and parsley. Simmer over low heat for 5 minutes. Remove from heat and set aside.
  5. Remove the chicken from the oven and brush each filet with the Thai chili sauce mixture. Serve with a side of white rice.
