Ingredients

  • 2 large eggplants
  • 4 medium-sized tomatoes
  • 1 cup mozzarella cheese, shredded

  • 1/4 cup fresh parsley, chopped

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Wash the eggplants and tomatoes. Cut the eggplants into 1/2-inch thick slices and the tomatoes into 1/4-inch thick slices.
  3. Place the eggplant slices on a baking sheet lined with parchment paper. Brush both sides of the slices with olive oil and sprinkle with salt and pepper.
  4. Roast the eggplant slices in the preheated oven for 20 minutes, flipping them halfway through, until they are softened and slightly browned.
