- 1/2 cup grated Parmesan cheese

Directions
- Turn on the Instant Pot and select the Sauté function. Heat the olive oil and butter until the butter is melted.
- Add the chopped onion and minced garlic to the Instant Pot. Sauté for 2-3 minutes, until the onion is translucent.
- Add the arborio rice to the Instant Pot and stir well to coat the grains with the oil and butter mixture. Sauté for another 2-3 minutes, until the rice is slightly toasted.
- Pour in the white wine and stir, allowing the wine to evaporate for about a minute.
- Cancel the Sauté function and add the chicken or vegetable broth, dried thyme, salt, and pepper to the Instant Pot. Stir well to combine.
- Close the Instant Pot lid and set the pressure release valve to the Sealing position. Select the Manual/Pressure Cook function and set the cooking time to 5 minutes on high pressure.
- Once the cooking time is up, perform a quick pressure release by carefully turning the pressure release valve to Venting. Be cautious of the hot steam.
- Open the Instant Pot lid and stir in the peeled and deveined shrimp, lemon zest, and lemon juice. Close the lid and let the residual heat cook the shrimp for 5 minutes.
- Once the shrimp is cooked, open the Instant Pot and stir in the grated Parmesan cheese. The risotto should be creamy and thick.
