Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 1/2 cups arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. Turn on the Instant Pot and select the Sauté function. Heat the olive oil and butter until the butter is melted.
  2. Add the chopped onion and minced garlic to the Instant Pot. Sauté for 2-3 minutes, until the onion is translucent.
  3. Add the arborio rice to the Instant Pot and stir well to coat the grains with the oil and butter mixture. Sauté for another 2-3 minutes, until the rice is slightly toasted.
  4. Pour in the white wine and stir, allowing the wine to evaporate for about a minute.
  5. Cancel the Sauté function and add the chicken or vegetable broth, dried thyme, salt, and pepper to the Instant Pot. Stir well to combine.
  6. Close the Instant Pot lid and set the pressure release valve to the Sealing position. Select the Manual/Pressure Cook function and set the cooking time to 5 minutes on high pressure.
  7. Once the cooking time is up, perform a quick pressure release by carefully turning the pressure release valve to Venting. Be cautious of the hot steam.
  8. Open the Instant Pot lid and stir in the peeled and deveined shrimp, lemon zest, and lemon juice. Close the lid and let the residual heat cook the shrimp for 5 minutes.
  9. Once the shrimp is cooked, open the Instant Pot and stir in the grated Parmesan cheese. The risotto should be creamy and thick.
  10. Serve the Instant Pot Shrimp Risotto hot, garnished with fresh parsley.
