Ingredients
- 3 pounds baby potatoes
- 1 cup chicken broth
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon white wine vinegar
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh chives
Directions
- Place the potatoes and chicken broth in the Instant Pot.
- Lock the lid in place and set the valve to sealing position. Select high pressure and set the timer for 5 minutes.
- When the timer is done, quick release the pressure. Drain the potatoes and place them in a large bowl.
- In a small bowl, whisk together the mayonnaise, mustard, vinegar, honey, garlic powder, onion powder, salt, and pepper.
- Pour the dressing over the potatoes and stir to combine. Sprinkle with chives and serve.
